While this squash is certainly a star on its own, the texture is hearty and yet light which lends to the versatility of using it as a side ingredient in pasta, roasting with a plethora of other roots, or withstanding tempura. It truly is distinguished from the culinary darling, Kabocha squash.

Step 1

Preheat oven to 425F.

Step 2

Wash, deseed, and slice squash into bite size pieces.

Step 3

Arrange squash onto a sheet pan and drizzle with sesame oil and season well with Momofuku Savory Salt.

Step 4

Roast the squash for 15 minutes. Turn the oven off and rest the squash in the warm oven for 3-5minutes.

Step 5
