  • 2 brioche burger buns

    Sesame oil (or olive oil, for frying)

    For the Patties:

    0.5 yellow onion

    0.5 egg white

    2 teaspoons cornflour

    Japanese Panko

    8 oz prawns (or shrimp)

    umami seasoning

    garlic granules

    For the Slaw:

    1 carrot (large, thinly sliced or shredded)

    0.5 green bell pepper (thinly sliced or shredded)

    0.25 yellow onion (thinly sliced or shredded)

    1 teaspoon soy sauce

    3 teaspoons mayo

    1 teaspoon miso

    For the Umami Steak Fries:

    1 lb fingerling potatoes

    ⅓ tablespoon soy sauce

For the Umami Fries (Skip if not making these.)

Step 1

Preheat the oven to 425F. Bring a pot of water to a boil.

Step 2

Peel the fingerling potatoes and cut in half lengthwise. Place into the boiling water and cook until just tender. Then marinate the cooked potatoes in a little soy sauce for 4-5 minutes. (While the potatoes marinate, start step 1 of the burger.)

Step 3

Arrange the potatoes on a sheet pan and cook for 15 minutes. (Meanwhile move onto steps 2-6 for the burger. *Once the steak fries are done, either set them aside or leave in the warm oven until the burgers are ready.)

For the Burger

Step 1

Thinly grate, or slice carrots, green pepper and onion. Sauté until soft and set in a bowl in the refrigerator to cool rapidly.

Step 2

Rinse the prawns or shrimp in cold water and pat dry. In a food processor, pulse the onion, half the shrimp, egg white and cornflower with salt, umami seasoning, and garlic granules, into a rough paste. Add the rest of the prawns and pulse to roughly mix throughout the paste and create texture in every bite. (The mixture should still be a little sticky.)

Step 3

Spread panko onto a plate. Then portion half the prawn mixture into your hands and shape into a patty. Press the patty into the panko and sprinkle more panko on top and the sides to thoroughly coat.

Step 4

Heat a generous drizzle of sesame or olive oil in a large pan until the oil shimmers. Tenderly place the patties into the pan and cook until golden and springy to the touch. Approximately 12 minutes total: 2-3 minutes each side twice.

Step 5

Meanwhile, make the slaw. In a small bowl mix soy sauce, mayo and miso. Pour over the carrot, bell pepper, onion mixture and toss to coat.

Step 6

In another large pan toast the buns. *Try spreading a thin layer of mayo on the buns first for an even crisp toast. Once the patties are done, place them onto a bun, then portion slaw on top of the patty.
