Blueberry Peach Greek Yogurt Parfait with Wildflower Honey and Walnuts
The popularity of the parfait has ebbed and flowed since its inception in the 19th century. In France, where the oldest recipe dating to 1869 was found, the parfait is described as being a frozen dessert made from a base of cream, sugar syrup, and eggs. Several recipes spanning from the mid 1800s to the early 1920s require the use of a mold to form the parfait into a "sugar loaf", and the dessert was usually chocolate or coffee flavored. By the 1920s the parfait was more commonly served with fruit in tall glassware with a long stemmed spoon.
Across the pond, the two most popular ways to prepare an “American parfait” are with a base of parfait cream and ice cream or with a base of greek yogurt. Both usually feature fruit, granola, oats, nuts or all of the above!
In this recipe, a middle layer of light and fresh greek yogurt is supported by a base of floral pureed peaches, a juicy and delicious blueberry walnut topping, and a drizzle of fragrant wildflower honey. This morning or afternoon delight quickly comes together in just 5 minutes!
