Oh-oh “Oreos”

It’s said the biscuit–or cookie, derives its name from the greek word for mountain oreo. Others speculate the cookie’s name is just fun to say, O-re-o. Either way, Oreos have been one of America’s favorite sweet treats since 1912. These delectable cookies are easy to make and this recipe will delight guests with a surprising and yet familiar flavor.   • ½ cup unsalted butter

    ½ cup white sugar

    1 teaspoons salt

    1 eggs

    1 cups all-purpose flour

    ½ cup dark cocoa powder

    ¼ teaspoon baking soda

 

Step 1

In a stand mixer, cream together 1/2 cup of softened butter with the brown sugar and salt, until light and fluffy.

Step 2

Beat in eggs until fully incorporated.

Step 3

Add flour, cocoa powder, and baking soda into the wet mix. Blend well.

Step 4

Turn the dough out onto a counter or board and push together into a flat square. Wrap the dough in plastic wrap or a ziplock removing the air and refrigerate for 1 hour.

Step 5

Preheat oven to 325˚F.

Step 6

Remove the dough from the fridge, and divide into two portions.

Step 7

On a lightly floured surface or between two sheets of parchment paper, roll the dough to ¼-inch thickness.

Step 8

Using a small round cookie cutter or a very small jar or cup rim cut the dough into individual rounds and place on a parchment-lined or well oiled baking sheet, spacing each cookie 1/2 inch apart.

Step 9

Pack together and re-roll out any scraps to cut additional cookies. Repeat with this process with the remainder of the dough.

Step 10

Bake in a preheated oven for 15 minutes.

Step 11

To make the filling, combine 1/4 cup butter, powdered sugar, and elderflower cordial in a medium mixing bowl or stand mixer. Beat together until light and fluffy.

Step 12

To assemble the cookies spread a small scoop of the icing onto one of the cookies and sandwich it with another. Press lightly and remove any excess off to create a neat presentable cookie.
