Garden Lamb Chocolate Pasta

This family favorite began as combination of curiosity and spare ingredients from a Mediterranean dish. It's unexpectedly delicious, healthy, and savory. (Chocolate isn't naturally sweet and has been an essential ingredient or spice in many savory dishes for centuries.)

  • 1 pound ground lamb

    1 ½ cups spinach

    1 red bell pepper

    1 red onion

    1/2 teaspoon cumin

    1/2 tablespoon umami powder

    salt

    1/2 teaspoon garlic granules

    almond milk

    ½ teaspoon all purpose flour

    1 tab butter

    4 ounces goat cheese

    1 pound Chocolate Pasta

    8 ounces Trumpet mushrooms

Step 1

If making fresh chocolate pasta, prep the fresh pasta. See recipe here.

Step 2

Thinly slice red bell peppers, red onion, and trumpet mushrooms.

Step 3

Bring a pot of water to boil and cook chocolate pasta until al dente or soft.

Step 4

Meanwhile, cook sliced vegetables in large pan. Then turn in butter, flour, and 2-3 tablespoons of almond milk until vegetables are creamy. Season with 1/2 tablespoon of umami, 1/4 teaspoon cumin, and 1/2 teaspoon garlic granules.

Step 5

Meanwhile, cook ground lamb in a large pan. Season with a heavy sprinkle of umami, garlic granules, and salt. Once the ground lamb is cooked through drain and add to the vegetable mixture.

Step 6

Mix spinach into the vegetable and meat mixture until wilted. Then drain and add chocolate pasta. Toss until mixed through.

Step 7

Serve pasta into bowls, season with salt to taste and top with rosemary goat cheese. (Mix together so goat cheese coats the pasta before eating. Add more garlic granules for a stronger garlic flavor if desired.) Enjoy!
