Step 1
Bring a pot of water to boil.
Step 2
Slice mushrooms and bok choy. Add mushrooms to a hot pan with olive oil and a bit of water, season generously with garlic. When mushrooms are almost tender add bok choy and set pan to simmer.
Step 3
Add noodles to boiling water and cook until soft. 3-8 minutes.
Step 4
Add sesame oil, and soy sauce to a small sauce or mixing bowl. Season with ginger, garlic to taste. (About 1/4 teaspoon of each.) Stir.
Step 5
When noodles are done boiling, drain and add to the pan of vegetables.
Step 6
Pour sauce over noodles and vegetables. Toss gently, sprinkle with sesame seeds (optional) and serve!
