  • Ghee for frying ( sesame oil if ghee is unavailable )

    1 cup flour

    ¾ cup Cornmeal

    1 ½ teaspoons Baking Powder

    2 teaspoons salt

    1 teaspoon onion powder

    ¼ teaspoon Paprika

    1 Egg (Large)

    1 cup Buttermilk

    parsley

    1 large sprig rosemary

Step 1

Rinse and chop the herbs.

Step 2

In a stand mixer bowl or large bowl add cornmeal, flour, salt, baking powder, onion granules, paprika, and fresh herbs. Add 1 egg and buttermilk and stir until combined. Stir in cubed butter.

Step 3

Preheat a few tablespoons of ghee in a large skillet, enough to fill the pan 1 to 2 inches. Drop a bit of the batter in the ghee to test, once it turns golden brown using a teaspoon, round out a portion of the batter and drop in the hot oil. Repeat until there are a five to seven portions in the pan.

Step 4

Cook until the hush puppies are golden brown 2-3 minutes. Remove the hush puppies and set on a paper toweled lined plate. Repeat until all of the batter is gone. Sprinkle with sea salt or roll the hush puppies in the sea salt.
