Miso Butter Rolls

  • Miso Rolls

    1 cup whole milk (warm, 110-115 degrees F)

    2 tablespoons miso paste

    1 ½ teaspoon Umami Seasoning

    1 teaspoon granulated sugar

    1 x 0.25 ounce active dry yeast

    2 eggs (large, at room temperature)

    ¼ cup unsalted butter (melted and cooled)

    1 teaspoon kosher salt

    4 cups bread flour or High Protein All Purpose flour

    Olive oil (for the bowl)

    Egg Wash

    1 egg

    1 tablespoon water

    Miso Wash

    1 tablespoon butter (Melted, for brushing)

    1 tablespoon miso

Step 1

Pour warm milk into the bowl of a stand mixer or in a large bowl. Add sugar and yeast. Stir, and let it stand for about 10 minutes.

Step 2

Add eggs, melted butter, miso paste, umami seasoning, and salt. Mix over medium speed until thoroughly combined.

Step 3

While the mixer is still on, gradually add 3 cups of flour. Continue adding a little flour until the dough forms and begins to pull away from the bowl.

Step 4

Adjust the mixer speed to low, add 1 cup of flour slowly while kneading for 5 minutes. The dough should now be a little sticky and a little springy.

Step 5

Shape the dough into a ball, place into a bowl and drizzle the dough in olive oil. Cover bowl with a damp towel and allow it to rise for 1.5 hours or until it has doubled in size.

Step 6

Roll the dough onto a very lightly floured or non-stick surface and cut into 6 portions for bun size or 10 portions for dinner roll size. Stretch the outer edges of each piece and pinch into the bottom to form a ball. Arrange the balls seam side down onto a baking sheet.

Step 7

Cover the baking sheet and allow the dough to rise for 1 hour or until puffed.

Step 8

Preheat the oven to 350 F. In a small bowl, mix 1 tablespoon of miso with 1 tablespoon of melted butter. Crack 1 egg into a small bowl, add 1 tablespoon of water and scramble well. Brush the top of the rolls with the miso butter, then the egg wash. Bake for about 15-20 minutes, or until golden brown on top.
