1 orange
1/8 cup water

Rhubarb Jam
Step 1
Zest 1 orange and set zest aside in a small bowl. Dice the rhubarb and place into a pot.

Squeeze the orange juice into the pot, add honey, water, and the orange zest. Stir and on high heat bring to a boil. Reduce heat to medium-low and cook, stirring occasionally, for 10 minutes. Allow the jam to cool in the pot for 5 minutes. The jam will continue to thicken as it cools.
French Toast

Meanwhile, in a shallow bowl, whisk together the milk, eggs, vanilla extract, and elderflower syrup (if using).
Step 2
Dip each slice of bread in the egg mixture, turning to coat both sides.
Step 3
Heat a large skillet over medium heat. Melt a tablespoon of butter in the skillet.
Step 4
Add 2 slices of bread to the skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
Step 5
Repeat with the remaining bread, adding more butter to the skillet as needed.
Step 6
To serve, top each slice of French toast with a small dollop of mascarpone, pistachios, blueberries, and maple syrup.
